Maitake ("dancing mushroom" in Japanese) grows as a dramatic mass of overlapping, fan-shaped fronds in shades of grey and brown. The flavour is earthy, woodsy, and complex — different from any other mushroom in our collection. It's highly regarded in Japanese cooking and is one of the most studied functional mushrooms.
