WX015 was cloned from an Asian grocery store shiitake and has been part of our collection ever since. An Asian cultivar through and through — it produces broad, bronze-brown caps with thick, dense flesh and a firm texture that holds up well in cooking. The flavour is deeply umami and slightly smoky, with a wine-like richness that's particularly pronounced when the mushrooms are allowed to dry slightly before cooking. Grown on hardwood substrate for best flavour.
